It begins in the vineyards. Tim Bucher, owner of Trattore Farms believes great wine comes from great fruit. The terroir which encompasses the climate and soils along with the vintage which makes up the viticulture and the harvest is essentially what is at the core of growing great fruit. Macroclimates also can greatly contribute to how luscious varietals can be. Pruning, irrigation and sustainable practices that help enrich the soil are all factors to growing and producing great fruit. Clay soils, for example, can product rich structured wines while sand is known for producing wines with higher aromatics and slightly lighter color intensity. Silt can produce highly vigorous vines offering more herbaceous flavors. The complexity in soils means complexity in the wines. We are fortunate to have more diverse soils on our estate.

We strive to grow the finest fruit on our estate. This combined with high-quality ingredients and exceptional preparation skills which include how we ferment the wines and the various types of oak barrels we use for our varietals ultimately contributes to the science and art behind the wine. Different grape varieties need different levels of extraction to develop positive flavor characteristics. For example, our Rhone blends and Pinot Noir do better with delicate extraction with the process we use known as punchdowns which reintegrate grape skins and seeds into the fermenting juice so that the proper levels of phenolic extraction can be made.

The choice of the aging vessel is where much of the art comes in. We use both neutral (used) and new barrels depending on how we want the wines to smell, taste and finish.
