Triple Berry Summer Salad
This berry spinach salad is perfect for a 4th of July barbecue (it’s red, white and blue) or Labor Day party, as well a spring or summer potluck or picnic.
Ingredients
Salad Ingredients
- 6 cup organic baby spinach
- 1 cup organic strawberries, halved
- 1/2 cup organic raspberries
- 1/2 cup organic blueberries
- 1/3 cup goat cheese, crumbled
- 1/3 cup red onion, thinly sliced
- 1/4 cup pecans or walnuts, roughly chopped
Cranberry Pear or Raspberry White Balsamic Vinaigrette
- 1/2 cup Trattore Farms olive oil
- 2-3 tbsp Trattore Farms Cranberry Pear or Raspberry White Balsamic Vinegar
- 1 tsp Dijon or stone-ground mustard
- 1/4 tsp salt
- 1 clove garlic, crushed
- pepper to taste
Instructions
Prep the Salad
- Add the spinach, strawberries, raspberries, blueberries, red onion, goat cheese, and pecans or walnuts to a large mixing and toss together.
Prep the Vinaigrette
- Whisk dressing ingredients together in a bowl. Taste and adjust ingredients to your liking. Drizzle over salad!
